So what do we eat around here anyway?

Yeah, I know… No one cares what I had for lunch, BUT they didn’t say anything about breakfast. Plus, Kara asked. So with that, the first installment of Erika On Demand is all about breakfast. Enjoy.

Smoothie recipe adapted from Crazy Aunt Purl

Makes two smoothies, and needs a fairly strong blender.

2 teaspoons Flax Seed Oil

2 scoops Quick-Dissolve Soy Protein Powder

Powdered Vitamin C (read label for dosage)

Heaping tablespoon Psyllium Husks

1 cup Milk

1 cup Kefir

1 cup frozen Blueberries

2 frozen Bananas

2 cups packed Fresh Baby Spinach

And a bonus video in case you were just dying to know what I feed my kids while I’m still groggy in the morning. Bonus points for those who can identify the sound of my coffee maker in the background. Movie studios pay extra for those kinds of effects, but you? You get it for free.

Peeling bananas and keeping them in the freezer? Why didn’t I think of that? Seriously, that’s brilliant.

I had kiefer for breakfast, but nothing else in it. Every once in a while I’ll go through a smoothie phase, but I just never seem to be able to stick with it. Good recipe though!

I make myself smoothies daily also, but it never occurred to me to add the spinach. It was awesome. Now I want to try other power veggies…maybe broccoli next?hmmmm
